The National Peanut Board (NPB) is bringing innovation to the forefront of foodservice with the launch of its new Plant Forward Kitchen video series: an engaging content initiative designed to showcase how peanuts can power creative, nutritious, and plant-forward menus across a variety of settings.
The first of three videos in the series debuted in March, spotlighting a forward-thinking approach to K–12 school meals through a Peanut Butter Toast Bar concept. Developed in collaboration with culinary professionals, the series aims to inspire foodservice leaders with practical, scalable ideas that make healthy eating both accessible and appealing.
In the debut episode, Chef Aaron Smith of Seattle Public Schools demonstrates how a customizable toast bar can transform a traditional school lunch into an interactive experience. By offering a variety of toppings – (from familiar favorites like peanut butter and banana to more adventurous combinations like marmalade and sriracha) – students are empowered to build meals that reflect their tastes while meeting nutritional standards.
The concept goes beyond creativity; it’s rooted in impact. By making meals more engaging, schools have the opportunity to increase participation while supporting balanced nutrition. The format also aligns with growing demand for plant-forward options that are both satisfying and easy to implement within existing foodservice operations.
Adding a critical layer of expertise, Registered Dietitian Angela Gomez, RDN, SNS, provides insights into nutrition standards, menu planning, and peanut allergy awareness in school environments.
